Grouper | Grouper with Horseradish Sauce | Captain's Favorite Grouper Stew
2 pounds Florida grouper fillets cut into
1 inch pieces
2 tablespoons paprika
1 tablespoon minced garlic
1 tablespoon margarine
4 cups chopped Florida yellow squash
1 1/2 cups chopped Florida onions
1 cup chopped Florida celery
6 medium Florida tomatoes
2 cups Florida corn kernels
1 tablespoon tomato paste
1 teaspoon oregano
1 teaspoon thyme
1 teaspoon savory
Seafood alternatives: Florida swordfish, catfish or mullet
Combine fish, paprika and garlic. Melt margarine in a skillet and cook fish on medium-high heat until fish flakes easily. Remove from heat and set aside. Combine squash, onions, celery and tomatoes in a food processor, process until smooth. In a large sauce pan combine corn, tomato paste, oregano, thyme and savory with vegetable mixture; simmer on medium heat for 15 minutes. Add fish; heat thoroughly and serve.
