Recipe:
Ham and Lentil Soup
- 1 lb diced ham
- 1 ham bone
- 1 lb baby carrots
- 1 chopped yellow onion
- 4 large celery stalks sliced
- 2 cloves crushed garlic
- 6 cups water or broth
- 2 12 oz bagged lentils
- 2 tbsp crushed black pepper
- 2 medium chopped tomatoes
- Salt to taste
In a large saucepan, combine onion, garlic, celery, and carrots. Saute over medium heat until onions turn clear. Add ham, bone, and lentils and stir 3 minutes. Add tomatoes, pepper, and water, and bring to a simmer. Stir occasionally 1 1/2 to 2 hours until mixture thickens and beans are soft. Salt to taste.
